Baked Camembert with Pears

Again, quick and easy. I find the radicchio a bit bitter...you can try something else. Please remember to use Australian cheese and a local honey if you can.

Method

  • Serves 4

  • 1 x 250G Camembert

  • 25G Walnut or pecan halves

  • 1 Tsp honey

  • 2 firm but ripe pears, cored and cut into wedges

  • 2 Radicchio (or greens of your choice) or assorted vegetable sticks

  • Small handful fresh thyme leaves (optional)

  • Preheat the oven to 180 degrees

  • Carefully cut the top layer of the cheese rind off

  • Place in a ovenproof dish, rind side down

  • Roughly chop the nuts and sprinkle on top of the

  • cheese.  Drizzle the honey over and season with ground black pepper

Bake uncovered for about 15 mins or until the cheese is melted and gooey

Serve on a platter with thyme scattered on top surrounded by the pear, radicchio or vegetable sticks.
