'shroom burgers..

A different take on the typical burger- quick, easy and very tasty. Oh, and healthy as well. Preparation time: 25mins Cook time :10mins Serves 4

Method

Put the walnuts, mushrooms, beetroot, garlic, 1/4 cup of the onion, paprika, parsley, 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and egg/xanthum gum if used into a food processor and pulse it until blended but still chunky

Put the mixture into a bowl and add the rest of the onions, the flour and knead until fully combined. Greasing your hands with olive oil helps.

On a baking tray or wax paper, make 4 patties about 10cm diameter and 2 1/2 cm thick

Heat a large pan over med-high heat, add the 3 tablespoons of avocado or olive oil and cook the patties 4-5 mins each side until nicely brown.

Serve each patty on a lettuce leaf, add salt and pepper to taste , top with the avocado slices and cover with another lettuce leaf.

Note that I didn't add the avocado or top lettuce leaf for the photo.

You will need

  • 2 cups walnuts, halves and pieces

  • 2 cups chopped mushrooms

  • 1 cup chopped beetroot

  • 2 cloves of pealed garlic or 1/4 teaspoon of garlic powder

  • 1/2 cup chopped red onion

  • 1 teaspoon of paprika

  • 1 tablespoon dried parsley

  • sea salt

  • cracked black pepper

  • 1/2 cup finely chopped basil or sage

  • 2 tablespoons cassava or tapioca flour

  • 3 tablespoons of extra virgin olive oil or avocado oil

  • 8 lettuce leaves

  • 1 Hass avocado, peeled, pit removed and sliced

  • 1 egg and teaspoon of xanthum gum (optional )
