Portobello 'toast' with goats cheese and pine nuts

Another very quick and tasty breakfast or brunch. It only takes a couple of minutes.

 

Method

  • Turn a grill to high

  • Place the mushrooms on a baking tray and drizzle the oil on.( add black pepper to taste )

  • Grill the mushrooms for 3 mins

  • Remove them from the grill, dot the goats cheese on and sprinkle the pine nuts on

  • Put the tray and mushrooms under the grill for another 2 mins then remove and sprinkle on the chives

Thats it!!

 

Ingredients

For 1 serving

  • 2 Portobello mushrooms

  • olive oil

  • 30g goats cheese

  • 1 tbsp pine nuts ( although chopped walnuts work well too! )

  • a handful of sipped chives
