Portobello 'toast' with goats cheese and pine nuts
Another very quick and tasty breakfast or brunch. It only takes a couple of minutes.
Method
Turn a grill to high
Place the mushrooms on a baking tray and drizzle the oil on.( add black pepper to taste )
Grill the mushrooms for 3 mins
Remove them from the grill, dot the goats cheese on and sprinkle the pine nuts on
Put the tray and mushrooms under the grill for another 2 mins then remove and sprinkle on the chives
Thats it!!
Ingredients
For 1 serving
2 Portobello mushrooms
olive oil
30g goats cheese
1 tbsp pine nuts ( although chopped walnuts work well too! )
a handful of sipped chives
