Baked Camembert with Pears

Again, quick and easy. I find the radicchio a bit bitter...you can try something else. Please remember to use Australian cheese and a local honey if you can.

Ingredients

  • Serves 4

  • 1 x 250G Camembert

  • 25G Walnut or pecan halves

  • 1 Tsp honey

  • 2 firm but ripe pears, cored and cut into wedges

  • 2 Radicchio (or greens of your choice) or assorted vegetable sticks

  • Small handful fresh thyme leaves (optional)

Preheat the oven to 180 degrees
Carefully cut the top layer of the cheese rind off
Place in a ovenproof dish, rind side down
Roughly chop the nuts and sprinkle on top of the cheese.  Drizzle the honey over and season with ground black pepper

Bake uncovered for about 15 mins or until the cheese is melted and gooey

Serve on a platter with thyme scattered on top surrounded by the pear, radicchio or vegetable sticks.
